Evil, but delicious, loaded baked potato 'tater tot' waffles.
I know, I know, probably terrible fat calories with loaded waffle, but it is delicious, indulgence only, not regularly. Follow the link to Bon Appetit, scroll down and watch the video, I enjoyed the chit chat of Jen and Zoe.
I found this recipe (from The Riddler in San Francisco) for a waffle made with tater tots in September 2017 Bon Appetit, watched their video and thought why not. I'm not sure that I've ever eaten tater tots (British remember), but I know what they are. I looked up on line how to make homemade tater tots, presumed more real ingredients, and also assumed difficulty of getting gluten free. I also decided to look at bags of frozen tater tots in the store to see what they contained.
Guess What (and I'm sure most of you already know this), Ore Ida sell gluten free tater tots. So I bought a bag and experimented. But making home made you can control the amount of salt.

A few things I'd mention. Original recipe wants you to cook 8oz bacon in a skillet and use bacon grease to grease the waffle iron and add flavor. I tried and it didn't make a difference to taste or ease of releasing waffle, but took more time, effort, money, fat and salt calories. And too much grease makes a softer waffle when you want wonderfully crispy. They also add salt twice to recipe. We both found that bought tater tots were definitely salty to us as we are naturally low salt eaters. I tried with regular tater tots and crispy tater tots, didn't find a difference in crispiness, both were still salty to us and that was without any bacon or cheese on top. I didn't try the 'seasoned' tater tots, I thought we'd die with the salt.
I have a genuine Belgian waffle maker. Some brands claim to be Belgian waffle makers (meaning a waffle about twice the thickness compared to regular waffles on sale) but they are really just regular waffle makers. I don't have one of the fancy, hotel style, flip waffles - my girlfriend had one and it died on second use. I have complained about difficulty of buying a decent Belgian waffle iron and how inconsistent cooking is in many of them. Remember unless your wheat use waffle iron had removable plates for thorough washing, you have to buy a new waffle iron.
I had stopped to get gf hamburger rolls for homemade burgers. None left so I put cooked burgers with mushroom, bacon, cream sauce on top of waffles. Tasty but far preferred waffle on its own and burger in a bun.
How about for a different Eggs Benedict ?
For my Belgian waffle maker I had to use two rows of tater tots. My waffle iron makes 4 x 4" squares, so for each waffle I did three rows of three tater tots sitting over the gaps of waffle, topped with two rows of three tater tots alternating with lower level. Preheated iron, food spray lightly, added tater tots (thawed), closed and locked with clip, cooked for about 8 minutes. Every waffle iron will differ in cooking times, regular versus Belgian, how cold tater tots were, how hot your waffle iron gets. I found with my Belgian waffle maker I had to use two rows of tater tots or they fell apart. They are quite loose anyway.

32 oz bag, 8 cups, about $2.20 a bag, made 8 waffles for us, one each with a fried egg and bacon with some melon was enough for Sunday breakfast. Leftovers reheated crispy in waffle iron, microwave they became soft. Or reheat all 8 waffles in oven ( or top shelf of bbq grill, watching carefully). Recipe also quoted topping with sour cream, bacon, green onions, shredded cheddar. Make in advance as a different potato side for summer BBQ's and Father's Day. But 'Eat your way to Heaven' as some Doctor said about Sunday Mass donuts. But New Year's brunch, or try oven baked, large pizza tray and then nacho toppings for Super Bowl etc.
