Toblerone Chocolate Mousse
One of my February 2012 recipes for National Foundation for Celiac Awareness, now Beyond Celiac.
I am very partial to Toblerone. I used to buy the huge bar normally only available at Christmas. Apart from regular milk chocolate golden paper wrapped bar, they also make white chocolate and dark chocolate in the same 3.52 oz bar, but not available everywhere. I even have a recipe for Toblerone chocolate fondue with Grand Marnier that I make which was my son’s signature dessert to make for parties. Toblerone states that it is gf but double check always. White chocolate Toblerone was too sweet for me, milk chocolate Toblerone is very mild in flavor.
October 2015 Toblerone doesn't manufacture any products that contain gluten. However, the company does not label its chocolate bar products "gluten-free." All Toblerone flavors contain milk.
2016 like many companies, Toblerone made bar smaller but used same sized packaging, with greater gaps between each mountain. I have also found in the past 12 months that Toblerone doesn't taste as fresh as it used to. So have they gone to cheaper ingredients affecting taste, or is it me being very fussy?.

This is a very simple dessert to make as an indulgence for Valentines. It is soft, creamy but not intensely chocolatey. I used pretty Martini glasses to serve. If you don’t own glasses similar to Martini glasses then perhaps use Valentines as an excuse to buy two glasses. You can buy some very decorative glasses quite cheaply from Home Goods, Marshalls and other discount stores. Apart from Martinis, I also use these glasses for serving individual savory salads as an appetizer, or individual desserts such as other mousses, fruit and cream, mini tiramisu, trifles, brownies and ice cream. Virtually anything looks more special served beautifully. Remember you eat with your eyes first of all.
1 x 3.52 oz bar of dark Toblerone if available (this is the normal small bar, but 2016 Toblerone changed size and design of bar). If you can’t eat Toblerone then use either regular chocolate or a dairy free chocolate. Just remember to think about adding some sugar if it is too dark a flavor for you. Whole Foods might still carry dark chocolate toblerone.
½ c (4 fl oz, 120 ml) heavy cream or coconut cream for dairy free
1-2 tsps (5-10 ml) of whatever liqueur you like and can tolerate. Or ½ tsp gluten free vanilla or almond extract.
1. In a microwave safe bowl, heat ¼ cup of cream until hot (about 30-40 seconds).
2. Remove Toblerone from paper and foil wrapping and break up into pieces. Stir into hot cream and leave for 2 minutes. Stir again and microwave as necessary so chocolate melts. With Toblerone there will still be bits due to nuts and nougat in chocolate. Stir in liqueur or extract.
3. Let chocolate mix cool for 10-20 minutes, it will thicken slightly.
4. Whisk remaining ¼ cup of cream until stiff then gently whisk melted chocolate mix into cream mix. Pour into 2 pretty glasses and chill. You can also use pretty tea cups, custard cups. Serve as is or topped with more whipped cream and strawberries. It can be made the night before Valentines.
Note, other ideas: if you live in a warm part of the country, I would stir ¼ tsp powdered gelatin into 2 teaspoons cold water. Let stand for 1 minute then microwave for a few seconds until gelatin is dissolved. Stir into melted chocolate mix. This will stabilize mix so it doesn’t melt from the heat. Then proceed with #3 and 4.
If you want dairy free. Use dairy free chocolate and whatever cream substitute you like to melt the chocolate -- increase liquid for melting . I have never used the whipped dairy substitutes, but you can whisk one real egg white (liquid egg substitutes won’t whisk) until stiff and then fold into chocolate mix once cooled. Traditional chocolate mousse (pots au chocolate) is made by melting chocolate, stirring in raw egg yolk and butter and folding in egg white.
