The 3 cheese queso dip, look a like

Happy Cinco de Mayo

No, this version doesn't have 3 cheeses.

I do buy the 'naked' burrito at our local Qdoba in Merrimack. So far, I've had no problems with xc. However in Boston, manager had to tell counter server what to do, and flying from Fargo, ND back to NH after speaking at a conference, I had to explain to server what she had to do, with all the attendant rolling of eyes and eye contact with friend. Not very reassuring. You can buy the queso dip to go but it's served with fried tortilla chips that aren't gluten free and it's far more expensive than making yourself.

I've tried various online versions of this dip. This is the best so far, but remember if you look at the ingredients at the Qdoba site, they have commercial ingredients we can't get, all of which alter the taste, so it can't be an exact replica.

8 oz (2 cups) white American cheese, cut into small pieces - comments on line say Restaurants can buy block of Landolakes white American which gives creamy richness.

1 cup (8oz, 500 ml) half and half or light cream.

4 oz (1 cup,112g) pepper jack cheese shredded. I buy Cabot, labeled gluten free, lactose free. Freeze remainder

1 x 4 oz (112g) can diced green chiles, undrained. There are two brands in my local store, neither say heat factor but customer told me they just give flavor, not heat.

I left out 1/4 cup chopped jarred pickled jalapeno slices, plus 1 tablespoon of the juice - I didn't think dip needed it. Up to you. I d have jar of 'peppadew, whole sweet piquante peppers' labeled gluten free in the fridge that I use when I want some heat.

I add dash of garlic powder, some finely scissored green onions and some chopped cilantro.

1. Warm half and half in 4-6 cup (1-1+/2 ltr) pan. Stir in American cheese until smooth.

2. Stir in pepper jack until smooth, then add green chiles, garlic powder, green onions and cilantro.

3. Heat gently until smooth. It is thin when warm but thickens as it cools. Taste and adjust heat factor, more herbs etc.

4. Serve with chips, over cooked chicken, pork etc, with rice and beans, over burgers.
